Chocolate Granola Brownies

Preheat oven to 350. Lightly butter a non-stick 9 x9 x 2 pan.

  • 16 ounces of bittersweet chocolate bits
  • 1 cup plus 2 Tbls. unsalted butter, cut into 1 inch pieces
  • 1 ½ cup granulated sugar
  • 3 eggs
  • 1 tsp. vanilla extract
  • ¾ cup flour
  • 1 ¼ tsp of kosher salt
  • ¾ cup of Milk and Honey Original Café Mix granola

Stir 12 ounces of the chocolate and 1 cup of butter together in a metal bowl and place over a saucepan of simmering water. Stirring until melted and smooth. Remove from heat.

In a medium bowl whisk together sugar, eggs and vanilla. Gradually whisk the melted chocolate mixture into the egg mixture.. Fold in flour and salt and granola. Stir just until combined.

Pour batter into prepared pan and bake 35 to 40 minutes or until a tester inserted in the middle comes out almost dry except for a few crumbs.

Let cool at least 20 minutes.

Meanwhile, stir remaining chocolate and 2 Tbls of butter and a dash of kosher salt together in small metal bowl and melt over a saucepan or simmering water until melted. Stirring until smooth. Pour over brownies and spread evenly. Let cool about 45 minutes until glaze is set.
