Coconut Cream Cheese Frosting
Makes enough for one-2 layer
- 1/2 cup (1stick) of butter softened
- 8 ounces of cream cheese softened
- 2 1/2 cups confectioners sugar
- 1/2 teaspoon pure vanilla extract
- 1 cup sweetened coconut
Place the butter and cream cheese in a bowl and cream together until light and smooth.
Add the confectioners sugar , one cup at a time, beating well after each addition until smooth.
Add the vanilla and mix on high speed for one minute to make the frosting light and fluffy.
Fold in the coconut.
