I use my own granola, available online (milkandhoneygranola.com), but feel free to use your favorite. Prep: 30 minutes; Bake: 45 minutes.

Pumpkin Bars with Granola Cream Cheese Frosting

makes 24

pre-heat oven to 350

2 cups all-purpose flour

2 cups granulated sugar

1 1/2 Tbls pumpkin pie spice

2 Tsp. of baking powder

1 tsp baking soda

1 tsp salt

1 (15oz ) can of solid pack pumpkin

4 large eggs

3/4 cup vegetable oil

1 1/2 cups of Milk & Honey Pumpkin Spice Granola


8 oz cream cheese, room temperature

1 1/2 cups powdered sugar

1/2 cup butter, room temperature

Grease a 13 X 9 x 2 inch pan. Stir the first six ingredients together in a large bowl to blend. Add the eggs, pumpkin and oil. Stir until blended and not lumpy. Stir in 3/4 cup fo the granola. setting the remaining granola aside for the frosting. Spread the batter into the pan and bake until a tester comes out dry. About 20 to 25 minutes.

Beat the cream cheese, powdered sugar and butter together in a bowl until well blended and smooth. Spread over the cooled cake and sprinkle with the remaining granola
