Carrot Granola Cake
Makes one 9 inch cake
- 2 cups peeled and grated carrots
- 1 cup milk and honey original mix granola
- 1/2 cup raisins
- 1 cups flour
- I ½ teaspoons cinnamon
- 1/2 tsp. ground cloves
- 2 teaspoons baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 2 large eggs
- 1/2 cup vegetable oil
- 1/2 cup granulated sugar
- 1/2 cup firmly packed light brown sugar
- 1 ½ teaspoon pure vanilla extract
Pre-heat oven to 350.
Grease and lightly flour one 9 inch round cake pan.
Mix the carrots, granola and raisins in a bowl and set aside.
Sift together the flour, cinnamon, cloves, baking powder, baking soda and salt in a separate bowl and stir to mix. Set aside.
Combine the eggs, oil, granulated sugar, brown sugar and vanilla together in large mixer and blend lightly with mixer paddle.
Slowly fold the flour mixture into the egg mixture and stir to blend just until all dry ingredients are moist and blended. Do not overmix.
Stir in the carrot mixture and stir just until combined.
Pour the batter into the pan and bake until a toothpick inserted in the middle comes out clean.
